Oversteer is when you hit the wall with the back of the car. Understeer is when you hit the wall with the front of the car.
Horsepower is how fast you're going when you hit the wall, and torque is how far you drag the wall with you.

Have fun with that cluster fuck of a rats nest there. It's still usuable if that's your only option, but it's going to be lot of work to trace all the wires in the FSM and match them up again.

If you cant solder worth crap don't even try either, you'll just have headache after headache.

I'm not trying to be a dick but with the questions you're asking I highly suggest you don't attempt this yourself or else nothing is going to work. You'll definately want to call in some help on this one.

For anyone familiar with harnesses and wiring this isn't a particularily hard project, but definately a long one because it's a big mess. All the pin-outs and wire colours are listed in the FSM's on that site, I can't remember if there's an entire harness/chassis diagram so you may be stuck with just using the pin-out diagrams to piece it together.

You have a few options:

1) Repair the existing harness
2) Mate the jumbled harness to your existing harness, why I don't know but you could if that's what you want, if you screw up then you have two useless piles of wire
3) Get a new harness

From someone who repairs all sorts of harnesses, get a new one if you can. Only it's an absolute last resort would you want to repair a harness in that sort of condition.
