how deep a rim can i go before i start rubbin stuff?

With factory tension rods in the rear, you could probably get away with a +25mm offset 6" wide wheel. As the wheel gets wider, you run out of room for lower offset. A 7" wheel would probably rub at +30mm, while anything larger than 7" wide would probably be best near stock offset (+40mm). At any rate, don't plan on seeing much outer lip.

An 8" wheel would put the face of the wheel 1.6" (40mm) from the center of the wheel. That means that 5.6" of inner wheel will protrude in towards the suspension. That's about 1" deeper than stock. Go see if you have 1" of extra room around the entire inner lip of the wheel. I doubt that would fit, and if it did it would be very close. I'd stick with 7.5" width max, to be safe.

The SRT rear knuckle allows more inward lip due to the position of the tension struts. The SRT strut perches are also higher to clear the larger wheel/tire height.

You can put in the stock wheels specs on one side (15x6 with a 40mm offset) and then what you want on the other side for your next wheel. What you need to pay attention to is not only the offset, but the back spacing. I can't remember how much backspacing we can use off the top of my head. I remember 03blackrt posted a picture of his 15x7 rota wheels with a 35 offset and it was coming mighty close to the strut and rear tensioner.
