How much would it change the acoustics inside the car? I would think the harder surface would be much more reflective of sound waves.

Easy to do but you may have to remove your windsheild or rear glass to get it back in.

It can be done, but it will sound like a school bus. Acoustically it will sound absolutely horrible inside. I put a vinyl headliner in my old 97 Grand Prix and it sounded like complete and utter ass. I vote "don't do it" if you care about acoustics.

would it still sound bad if i dynomatted the roof or is it just like inside noise?

Any sounds inside the car will bounce right off that roof and come back. Try going inside a completely empty room and having a conversation or turning on the radio. It's got a funky sound to it, and it's loud.
