Lexan is nearly bullet proof (In thick enough sheets), and it can be formed. I'm sure any windshield place that does Lexan windshields for chopped cars can form a piece to fit. You may be looking at a chunk of change, but prolly not a 3K chunk.
A 1/8" thick piece, formed to match the roof would prolly be strong enough. The slight dome would add quite a bit of strength, over a flat sheet.
I would let the ppl at the glass shop determine the best thickness tho.
While I am not a huge fan of sunroofs, I still think it is bad ass.
