How much can I safely mill a 2003 sohc head?
Stock cam
Stock pistons
Stock everything..

I did a quick search, but I'm in a bit of a hurry and don't have time to skim 50 posts

Yes.

You can prolly go .040, and be fine. You will just need adjustable cam gears.

Just a fyi I milled my mag head .040 and with a crane 14 valves tapped pistons, even with an adjustable gear.
So if you are going to mod it later take that into consideration.

Well, I did tell the machine shop to only mill it .020
Got it back today, clean and milled a whopping .010
Go figure... Old people...
"manufacturer suggests only..." bleh..

that's when you say, "i know the manufacturer suggests only .010, but i said .020. either you can re-do it, or i'll take my head and, pay you for only half of the work requested, and go to another shop"
